After the first crack, all gas supply is turned off and the smoke discharge from the drum (with the beans inside) is completely stopped. On the way to this moment you roast the beans very carefully. Roasting has two moments of expansion: first moment is called the first crack, then the molecules and fats are so hot that they bond together and the bean cracks for a second time. We do the roasting with our special UG 15 roaster, because it can apply a special technique where the roaster briefly cooks the coffee in its own smoke.
